If you can buy direct or as close as possible to the producers (or fisherman) that would be great, or do like me and rely on a trusted fishmonger (who I hope is telling me the truth). I might also be a bit weary of all-you-can-eat shrimp buffets that are too cheap....

I buy 'bio' prawns from Madagascar from our local fishmonger, at more than three times the price of the regular ones next to them. I buy them by the head, ten or a dozen, rather than by weight, as an occasional treat. Our fishmongers are small traders who seem to do quite a good job of labelling what they sell, and to be nice people, that's all I can really say. I feel that paying so much might make me a sucker, but at least I'm limiting my consumption and valuing and savouring every bite, and I think they do taste a bit better than the cheap ones. And like you, I save every scrap of the heads, tails and shells to make bisque!
