Jose's advice makes me think of the community restaurant project we're concocting in our town, i.e. not just buying local, nature-friendly ingredients wholesale as a community group, but organising the cooking of those with local chefs to better share good food equitably and, importantly, with joy

Oh please do share the details once it's up and running or close to it.

8 pop-ups so far, with some grant money now incoming to tinker with the concept and roll-out a manual of sorts for other communities to freely copy if they want a community restaurant of their own https://www.fromefoodnetwork.co.uk/canteen

Truly appreciate this capture of Jose's thinking.

Food as something more than a commodity is such an important conversation. Traveling has made me realise how often food is really about relationships, traditions and communities before it is about transactions.

I would have loved to have sat and listened to you both chat and agree with everything. We are working on our own local seed network and have been slowly trying to change the food system in Notts slowly but this gives me inspiration in other ways, thank you.
